Baked Orange Tofu

Tofu night! This is the Baked Tangerine Tofu from Veganomicon, but with regular navel oranges instead of tangerines in the marinade (which also includes rum, lime juice, soy sauce, a bit of allspice, etc.) I think 425F might be a bit of a high temperature, as the marinade evaporated way quicker than the recipe said it would. But very tasty indeed. I had a bit of leftover fresh-squeezed orange juice, so I replaced some of the water for the rice with it. Voila, orange rice!
