Red Lentil and Basmati Croquettes

This is the recipe called “Red Lentil and Basmati Rice Croquettes with Romaine-Mango Salad and Cucumber Raita,” from A Year in a Vegetarian Kitchen. I don’t use this book often, because it uses a lot of cheese and is one of those fancy books whose recipes rely, say, solely on the subtle magic of heirloom tomatoes warm from the garden paired with an aged pecorino. But it has some good ideas, and I like that it’s organised seasonally. Instead of the yogurt-based raita I made the cashew-based tzatziki from Veganomicon. To make up for replacing something Indian with something Greek I pulled a vice versa and replaced the pitas called for with this great vegan naan I found at the Farmers Market today… and some Boston lettuce instead of romaine. I’ve now duly spilled all the beans.
