Sarah’s Birthday Cake

Aw, it seems like just yesterday I was baking cupcakes for Sarah’s 24th and bringing them into one of those balmy summer M.A. courses… I still don’t have a working oven, so Alicia and I got together this weekend and made a chocolate wacky cake off the internet with rum/chocolate icing! I forgot my pastry bag and piping tips, so I went the old hardcore route with the snipped plastic bag.

Lazy Quick Bowl!

On Saturday night I wanted to make dinner in five minutes. I had leftover tofu marinade from the night before and some veggies in the fridge. I quickly stirfried them together while sauteeing a fake chicken breast, cut up the “chicken,” combined it with the veggies, thickened the sauce with a bit of cornstarch slurry, and scooped it into a bowl. Quick eats!

On Friday I went to Alicia’s to barbeque our dinner. She had corn, I had tofu, neither of us felt an overwhelming need for anything else, so we had our fill of delicious soy’n’corn: an evening of relating to our livestock friends, with wine added. And the Asian tofu marinade from Vegan With a Vengeance. And garlic and Earth Balance marg on the corn.

Ful Tabbouleh Pizza

Tonight, leftovers from La Luna restaurant, where I went the other night with my parents. I toasted a pita with ful on top (garlicky favas and chickpeas) and then put some tabbouleh on top. This is my favourite combo!

Tofu Nuggets and Sundry Items

Mom came to town, so I made dinner while we drank our wine! Tofu nuggets out of some silken tofu I froze and mashed and mixed with some seasonings, plus a breading of crushed rice crispies. Then some sauteed beans, cherry tomatoes and garlic from the market, leftover potato salad, and curried rice pilaf.

Matzoh Ball Soup

I woke up late, to a lazy, rainy Sunday. My first thought was that I have lots of dill in my fridge from yesterday’s bacchanal at the Farmer’s Market. What should result from all this? Well, if you’re a zany yet lovable shiksa like me, you make Matzoh Ball Soup from Vegan With A Vengeance. Thereby delightfully free of schmaltz, referring only, of course, to rendered chicken fat…rest assured that a lot of maudlin elevator music made its way into these nuggets of heaven. That’s grated carrot and dill on top, by the way, to make it more colourful.

Salad Night

The Farmer’s Market is exploding with amazing produce at this time of year! A display of lettuces literally took my breath away, because again, I am a huge food nerd. So, a potato salad with those brand-new potatoes with papery skins, fresh dill, lemon, garlic and olive oil. And a green salad with one of those lettuces: I was going to just add some toasted almonds, but again, I have too many Gardein fake chicken breasts hogging space in my freezer. I made the miso-tahini dressing again, thinner than for the other day’s sandwich. Both salads entirely made up of local produce!
