Butter Tarts

Well, my gas oven bit the dust today. I’m kind of relieved, because I was never sure it was working properly. The whole “not working at all” thing makes me feel less like an idiot getting someone to check into it.
But I had a bit of leftover pastry from yesterday’s pie, so I veganised a butter tart recipe off the internet and made six tarts in my toaster oven! It worked pretty well. I used some flax seed and water for the egg; I think next time I would add a bit of cornstarch, too. They are delicious and butter-tarty as they are, but are definitely the runny kind, not the firmer kind I like. But of course, they’re bound to be runny when you eat one right after baking…

  2. Me too! The landlord is coming tomorrow to have a look. I was in the middle of making a Mexican Mole Pie with cornbread crust last night when I realised it was broken: luckily I had only made the filling and measured out the topping ingredients: I hadn’t yet put everything together! So it’s all in my fridge, waiting for the oven to work.
