Zippy Sandwich with Coleslaw

Bear with me! For the next while, due to being broke and lack of space in my freezer, I have to try using up stuff that’s hanging around. This will mean lots of fake chicken breasts and leftovers– I may skip some days if the leftovers are too boring.

Anyway, this was a very tasty sandwich that took all of 15 minutes to make (and would have taken less if I had cooked the fake chicken while I made the slaw and dressing). For the slaw, I combined a bit of apple cider vinegar with a pinch of sugar and celery seed, and added a small shredded carrot, finely sliced red cabbage, and a tiny bit of grated fresh ginger. The dressing is the Miso Tahini Dressing from Veganomicon, which is just equal parts tahini and white miso plus the desired amount of water. Its richness balanced the tangy slaw perfectly! It would be a great sandwich with any baked/grilled/sauteed tofu you may happen to like, too.

Oh, and Judith! As per our conversation earlier, here’s just one example of a milk-free egg-free cheap supermarket hamburger bun I’ve enjoyed… it can be done!
