Chickpea Pitas

Going with the seafood theme for a second night, I made some chickpea “tuna” salad, loosely based on the Vegan With a Vengeance recipe, with hijiki seaweed and a dash of kelp flakes to make it sea-like. I’ve always liked seaweed–it’s the salt-o-phile in me–so all this fake fish stuff is kind of up my alley.
