Lentils ‘n’ Millet

A bit of a strange looking meal! Mexican Millet from my freezer stores (originally from Veganomicon), to which I decided to add some miso/tahini dressing to balance the slight increase in sharpness to the spiciness that happened in the freezer. Then I just cooked up some french lentils, the piece de resistance of the lentil family, just adding some salt and pepper and lemon juice and a touch of olive oil at the end. Some pickled beets so that I can pretend I ate vegetables with dinner, and to make the plate look more interesting…
