Eggplant Newburg

Another one from The Uncheese Cookbook, eggplant and mushrooms and tomatoes in a white wine-tahini-based sauce. A little on the bitter side, but tasty nonetheless. I think it was because I used a pretty bitter (read: cheap) wine. A bit of extra salt doctored it right up.
