Another hit from Veganomicon. These were for a potluck; for potlucks I like to make slightly fussier food that I probably wouldn’t bother making for myself. These were delightfully less fussy and difficult than my previous forays into finger food: yeah, I’m talking to you, spanakopita and samosas. Filled with roasted delicata squash (instead of the acorn squash called for), black beans, onion, garlic, coriander, cumin, jalapenos, all in a slightly sweet cornmeal/flour pastry–so good. A slightly blurry interior shot below.
