Peach Pie!

I couldn’t let peach season go by without making a pie. I used my old trusty The Complete Pie Cookbook from 1965, my Earth Balance non-hydrogenated shortening, and went to town. I’ve now gained about eight pounds in twenty four hours.
And yes, my new apartment means this pie is actually cooling on an honest-to-goodness windowsill.
