Broccoli Red Pepper Soup

Here’s a soup I made up tonight to use up the broccoli I bought this week. (I got home from the market on Saturday with more cruciferous than you could shake a stick at: broccoli, cauliflower, brussels sprouts…) I added a little of this and a little of that, boiled the works for awhile and then used my immersion blender on it. A little of this and a little of that included garlic, broccoli, red pepper, sundried tomatoes, veggie broth, white wine, tamari, nutritional yeast, balsamic vinegar, unsweetened soymilk, a handful of sauerkraut…
