Hummus Rollups

My mom made these for Christmas eve, and they were so good! We’ve been making them on and off for years; they’re originally from More Heartsmart Cooking by Bonnie Stern, but you can use whatever roasted vegetables you want in them. You take a flour tortilla, spread it with hummus–leaving room at the top part of the tortilla, otherwise you have a smooshy mess–and arrange a layer of sliced roasted vegetables on top. Roll up, wrap in plastic (or something more earth-friendly; you just want it to be able to bind into a roll, like a tea sandwich), refrigerate for awhile so that it will hold together when sliced, and then cut into slices. It looks like my mom used roasted sweet potatoes, red peppers, zucchini, and I can’t really tell what else, but they were very tasty! (The original calls for roasted eggplant slices and roasted red peppers).
