Huge Delayed Brunch

Right before I left Vancouver, I finally got to make the huge brunch I had planned for earlier in the holiday, which was thwarted when the power went out. We had it for dinner instead in the end. Here we have Spinach Cheez Souffle from The Uncheese Cookbook, which never really photographs well, unfortunately. Then the Leek Cauliflower Kugel from Vegan With a Vengeance, with pine nuts instead of almonds. Then White Bean Tempeh Patties, ibid., which you’ll remember from the trial run awhile ago (won’t you? won’t you?) And a salad and some roasted potatoes. A strange assortment of food, really, especially to serve to people that haven’t eaten much vegan food. But it was relished (to use the passive voice, and to imply that people added a condiment, when they really didn’t.)

Below we have the kugel up close, and the souffle in stages. I hereby re-register my quibble that it’s really more of a strata, or maybe a savory bread pudding.
