Plain Veggie Stirfry

I almost never make vegetable stirfry; it’s such a vegetarian standby that it never makes it to the forefront of my food thoughts. But on this particular day I had a hankering. All sorts of vegetables in this: onions, garlic, ginger, kale, turnips, mushrooms, and red pepper. Plus some cut-up puffy fried tofu from the Asian grocer. The sauce included mirin, hoisin sauce, sambal oelek, rice vinegar and tamari. But I didn’t want the sauce to overwhelm the veggies like it has in the past, so along with the cornstarch slurry I added quite a bit of water. I was quite happy with it, and found it very satisfying! Happy enough–with what is usually quite a humdrum meal–to warm up the leftovers for a cute boy to eat later that night. But I digress.
