Collard Yam Quesadillas

What to do with leftovers from Soul Food night? I had half a roasted yam and some collards left. Make quesadillas! First I mashed the yam with a bit of nutritional yeast and tahini, and I think some salt and onion powder, to make a kind of “cheese” filling (really only kinda. Mostly just tasty). Then I chopped up the leftover collards and mixed them into the yam, spread it on my trusty Mex-I-Can corn tortillas and panfried them. Yes, that’s two nights in a row of fried tortillas. You saw it here. These quesadillas fell apart a little more than is ideal, but were SO delicious. The raisins in the collards gave the quesadillas an especially unique flavour!
