Curried Scrambled Tofu with Cabbage and Caraway

From Vegan Brunch. Tasty; I wanted to try it even though I’m not the biggest scrambled tofu fan. It’s a shame that red cabbage can go so grey in cooking sometimes, but it didn’t take away from the taste. I’m still not the biggest scrambled tofu fan, but this was pretty good. I’ll save my gushing for the omelettes from that book– post to come in future days!
