Mack’s Birthday Dinner

I decided to make an Italian dinner for Mackenzie’s 27th birthday (straying from the theme for dessert– I wanted to make another pie. No birthday cake for this boy; I’m currently caked out.) While the lasagna was in the oven we ate antipasti from recipes in Nonna’s Italian Kitchen: delicious! Broiled vegetables– the portobello, asparagus, and yellow squash broiled in the red wine vinegar dressing, the green zucchini in olive oil and salt, and the red pepper just plain after de-skinning. Along with the plate of roasted vegetables we also had the Raw Tomato Sauce on baguette slices from the same book. Then the lasagna (red and white variation with pine nut cream) from Veganomicon. I’ve made this for a potluck before so it was tried and true. Then the pie– blueberry lemon from Farm Journal Complete Pie Cookbook. A feast!
