Leftovers and Spicy Smothered Cabbage

I don’t have a microwave, so I heat things up in a pan. Hence, I decided to “deconstruct” the lasagna a little for reheating purposes. I couldn’t resist roasting up some more zucchini, too. Then I had extra red cabbage, so I made the Spicy Smothered Green Cabbage from Vegan Soul Kitchen, substituting my red for the book’s green. I also added some celery slices. I’ve loved everything I’ve made from this book! Uncomplicated, tasty stuff.
