This is my favourite thing so far from the Vegan Brunch cookbook. Well, other than the crepes. Another great use for chickpea flour, and I found these not to be too chickpea flour-y nor too tofu-y. Just fluffy and comforting. I made a kind of rancheros filling, with tomatoes, garlic, bottled cactus, and salsa.
