Scaloppine Alla Marsala

The picture doesn’t do it justice: here’s the Scaloppine Alla Marsala from Nonna’s Italian Kitchen. I used reconstituted dried soy chunks that I got from Bulk Barn a long time ago to make Cholent with. Bryanna Clark Grogan’s reconstituting instructions (adding soy sauce, tomato paste, and nutritional yeast to the reconstituting boiling water) really made a difference in taste– no cardboardy TVP taste. I used red wine instead of marsala. And the whole thing was very tasty, indeed.

Blackened Tofu, Succotash Salsa, Marinara Pasta

Yep, went next door for dinner again and this is what we ate! I am a lucky girl. I made the Blackened Tofu and Succotash Salsa from Vegan Soul Kitchen, and Jesse made a delicious tomato pasta dish.

Bechamel Vegetable Crepes

Man! These were good crepes. So rich and satisfying, yet surprisingly low-ish in fat and high in nutrition. I used the crepe recipe in Vegan Brunch (again), the bechamel sauce recipe in Nonna’s Italian Kitchen (hands down my new favourite cookbook– Bryanna Clark Grogan is a genius!) and a bunch of lightly sauteed veggies.

Crispy Caper Salad

Ugh, I’ve been such a deadbeat! Anyhow, this is a delicious salad I had awhile ago. Just plain veggies and greens, but then I sauteed some capers and pecans in some (uber-splurgy) avocado oil. The dressing of champions!

Wild Rice Beet Salad

Now, I think this was the next day, and used the leftover dressing from the previous salad, as well as a bunch of produce and some wild rice from the pantry. But now that I think of it, it could have actually been a different, tahini-based dressing. Mind like a sieve.

Caesar Salad

Oh, this is from over a month ago. I’m combing the archives. I think it was the caesar salad dressing from Veganomicon. I made my own croutons from some day-old bread I had in my freezer– they were delicious! I tossed the cubes in olive oil and some herbs and seasonings like onion powder, etc., and toasted them up in the toaster.
