Bechamel Vegetable Crepes

Man! These were good crepes. So rich and satisfying, yet surprisingly low-ish in fat and high in nutrition. I used the crepe recipe in Vegan Brunch (again), the bechamel sauce recipe in Nonna’s Italian Kitchen (hands down my new favourite cookbook– Bryanna Clark Grogan is a genius!) and a bunch of lightly sauteed veggies.
