Vegan Mofo Day 5: Breakfast Club!

Yesterday I went to a potluck brunch at Terra’s–we called it “Breakfast Club” yet we ate around three; these ARE musicians after all, so it WAS breakfast. I brought this spinach Florentine “Ricotta” Pie from The Ultimate Uncheese Cookbook, which I’ve actually made for a potluck before and posted here… all the more reason it’s too bad I didn’t bring my camera to the actual event! There were vegan banana walnut pancakes, tofu scramble, two kinds of hashbrowns, fruit smoothies, and that was just the vegan stuff. Fantastic! We all just laid around afterward and then went home. I didn’t need dinner!
