Pesto Couscous Lentil Salad

Simple parsley pesto, Israeli couscous boiled in veggie stock, and cooked lentils. Voila, potluck dish!

  1. Wow, that looks really great! I may have to venture out into the totally pouring rain just to get myself some Israeli couscous for such a thing. Perhaps with kale pesto?

    • I’m sure that was tasty, too! I’ve made kale pesto– it’s a lovely bright green!
