Rice with Pigeon Peas
Are you sick of Viva Vegan! posts yet? Hope not! Here we have another delicious dish: Rice with Pigeon Peas. I made the deluxe “habichuelas” version as a moving-out dinner for my house-neighbours, with added capers, olives, and leftover Latin Baked Tofu cubes. This variation also calls for cubed squash, but I didn’t have any, so I left it out. Served with hot sauce and sauteed chard and chard stems, it was gobbled up in no time flat by my departing house-neighbours.
