Tamarind Lentils

Tamarind Lentils from Veganomicon! Made in celebration of the purchase of a delightfully inexpensive jar of tamarind concentrate. Tasty–not insanely flavourful, really, but a perfectly serviceable midweek healthy dinner.

Dandelion Mix Take Two

The caramelized onion-dandelion combo was too good, and I repeated it the next night, this time with cooked lentils and a grated carrot added. There’s also either a red pepper or tomato in there: I can’t remember which, and I can’t tell from the photo! But this was so tastily balanced and just tasted like pure health, in a good way.

Dandelion Pasta

Know what balances out the bitterness of dandelion greens? Caramelized onions and tomato sauce! Delicious. Slow cook lots of onions in some oil and a pinch of sugar and balsamic, and you’ve got yourself a great base for pasta sauce with tomatoes and blanched dandelion greens.

Lentils With Poppy Seed Tarka

Another try from the Mark Bittman piece on dal: Lentils With Poppy Seed Tarka (he noted that you can use any bean or lentil for any of the recipes–I used a five-lentil mix). This one was much more tasty and flavourful than the simple Spiced Lentil recipe I posted from the piece awhile back– sauteing a tarka really can’t be beat. And poppy seeds are something I love and rarely eat, so this was a treat.

BBQ Tofu from Vegan Dad

Here’s a saucy BBQ Tofu recipe from Vegan Dad. Very flavourful! I used brandy instead of Jack Daniels, because that’s all I had, and I think it would have been a little better with Jack. But very tasty.

Cookie Dough Scoops

Wow: a month has flown by! Blame the dissertation chapter and three gigs: I find in the game of school-music-food, I can only master two out of three at any given time.
Anyhoo, don’t make the Cookie Dough Scoops from Vegan Cookies Invade Your Cookie Jar. Because they are so delicious and addictive that you’ll open your freezer 37 times in twenty four hours and consume 1/2 cup of Earth Balance, a cup of sugar, and a cup and a quarter of chocolate chips in the same amount of time.
