Romano Cutlets, or, An Odd-Looking Meal

These are the Chickpea Cutlets–which use both beans and gluten–from Veganomicon, but made with romano beans instead of chickpeas. And they don’t photograph particularly well. This looks like particle board. But it tastes better than particle board, especially with mustard or plum sauce, because they’re a bit reminiscent of chicken fingers. You can tell by the frozen peas that I didn’t make it to the farmer’s market this week…
